Pumpkin Spice Pancakes
Discover our amazing baby pumpkin pancakes that your toddler will love. The secret to our fluffy pumpkin pancakes is a sprinkle of cinnamon to give them that little bit of extra yumminess. Ingredients
1 serve (230mL) prepared NAN Toddler Milk Drink or full cream cow's milk
1/2 cup (125g) pumpkin puree
1 cup (160g) wholemeal flour
1 egg
½ tsp vanilla extract
½ tsp ground cinnamon
½ tsp baking powder
1 tbsp coconut oil for cooking

Instructions
- Mix NAN Toddler Milk Drink, pumpkin, flour, egg, vanilla, cinnamon and baking powder until smooth.
- Using a heat resistant brush, spread some of the coconut oil over a non-stick frying pan on medium heat.
- Add tablespoonfuls of mixture to the pan; cook 2 minutes each side or until golden; repeat with remaining mixture, serve warm.
